Slow Cooker Apple Pork Roast

Ingredients

  • 2 medium apples
  • 1 medium red onion
  • 3/4 teaspoon ground cinnamon
  • 3-pound pork roast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup unsweetened applesauce

Preparation

  1. Core the apples and cut into 8 wedges. Coarsely chop the red onion.
  2. Place the apples and onion into the bottom of a slow cooker; sprinkle with 1/4 teaspoon cinnamon.
  3. Rub the pork roast with salt and pepper.
  4. Place roast on top of apples and onion in slow cooker.
  5. Pour applesauce over roast.
  6. Dust with remaining 1/2 teaspoon cinnamon.
  7. Cook on high heat setting for 4 hours.

  • If you are on a lower protein diet, adjust portion size to match your meal plan.
  • Follow food safety measures and avoid cross contamination.
  • Pork is done when it reaches internal temperature of 160º F.
