Ingredients

  • 1/3 cup unsalted butter
  • 1 cup crushed pineapple in juice
  • 6 maraschino cherries
  • 1/3 cup sugar
  • 2 large eggs
  • 2-1/4 cups all-purpose flour
  • 1 tablespoon baking powder

Preparation

  1. Set butter out to soften. Drain the pineapple. Chop the cherries.
  2. With a mixer, beat sugar and butter until light and fluffy. Add eggs and mix well.
  3. Mix flour and baking powder together.
  4. Combine sugar and flour mixtures and blend. Add pineapple and cherries and mix to combine. Pour into a greased 9 x 5-inch pan. Bake at 350° F for 1 hour.
  5. Cool for 10 minutes, then remove loaf from pan and transfer to a wire rack to cool. Cut into 15 slices.

Helpful hints

  • Make extra loaves and freeze until ready to share or enjoy.
  • To reduce carbohydrates use a granular sugar substitute.
