Apple Cinnamon Waffles

Ingredients

  • 1 medium apple
  • 1 tablespoon unsalted butter, divided
  • 1/4 cup brown sugar, unpacked plus 1/2 tablespoon
  • 1 teaspoon ground cinnamon, divided
  • 1 egg white
  • 2 tablespoons water
  • 1 tablespoon maple syrup
  • 1/4 teaspoon baking soda
  • 1/2 cup all-purpose flour

Preparation

  1. Peel and cube the apple. Heat a large pan over medium heat.

  2. Add 1/2 tablespoon of the butter to the pan and add apples. Stir frequently for about 2 minutes. Add 1/2 tablespoon of the brown sugar and 1/4 teaspoon of the cinnamon to apple.

  3. Cover apples in pan and let soften for about 5 minutes. Remove cover and remove from heat.

  4. Combine egg white and water in a large bowl. Add maple syrup, remaining butter and remaining 1/4 cup of brown sugar and whisk together.

  5. Add flour, baking soda and remaining 3/4 teaspoon cinnamon. Stir to combine.

  6. Preheat 2 slot waffle maker and spray with non-stick cooking spray if needed. Add half of the apples into the pan to waffle batter and add half the batter into each well of the waffle iron. Let cook about 2-3 minutes.

  7. Use a spatula to remove waffles from the iron. Repeat with remaining batter. You should have 4 waffles in total. Place 2 waffles on a plate and top with half of the remaining apples. Refrigerate remaining waffles and reheat the next day.

Helpful hints

  • You may also sprinkle a bit of powdered sugar over the top if desired.
  • The apples give this waffle a sweet topping. If adding more maple syrup over the top, remember to account for the extra sugar or calories depending on how much is added.
