Ingredients
- 1/4 cup bell pepper
- 1/4 cup onion
- 1/2 ounce ham
- 1 teaspoon canola oil
- 1 large egg
- 1 egg white
- 1/2 ounce extra-sharp cheddar cheese, shredded
Preparation
- Dice the bell pepper, onion and ham.
- Heat oil in a skillet over medium heat. Add pepper, onion and ham. Sauté for 2 minutes.

Beat egg and egg white. Pour mixture into skillet.
- Cook until the omelet firms up and then loosen both sides of the omelet with a spatula. Roll it over onto a serving plate and sprinkle cheese on top.
Helpful hints
- Add additional egg white if you need a higher protein breakfast.
- Double ingredients to make an omelet for two.
