High Protein Yogurt Parfait

Ingredients

  • 1/2 cup plain Greek yogurt
  • 1 scoop vanilla whey protein powder
  • 1/2 cup blueberries

Preparation

  1. Slowly add protein powder to the yogurt, mixing after each addition. Do not mix all at once or it may be clumpy.
  2. Wash the blueberries and pat dry. Place on top of the yogurt mixture.

Helpful hints

  • Greek yogurt has more protein per serving than regular yogurt. Look for at least 12 grams of protein or more per serving.
  • You may use a different lower potassium fruit, if desired. Try strawberries, raspberries, grapes, pineapple, pears, blackberries or a combination of these fruits.
  • There are many different brands of protein powder. They can vary on protein, potassium, phosphorus and sodium level. Your dietitian can help give a recommendation on what to look for in a protein powder.
  • Yogurt is a good source of calcium. Check with your dietitian or doctor to be sure your blood calcium level is in a healthy range.
