  • Dialysis

Ingredients

  • 1 lemon
  • 1 teaspoon Calabrian chili paste
  • 1 teaspoon honey
  • 2 chicken breasts, boneless and skinless
  • 1/4 teaspoon ground pepper
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 tablespoon heavy cream

Preparation

  1. Juice the lemon. In a small bowl, combine lemon juice, Calabrian chili paste, and honey. Stir to combine.
  2. Slice each chicken breast in half so that you are left with 2 thin cutlets. Season with pepper on each side.
  3. Heat olive oil in a skillet over medium heat. Add chicken to pan and cook for 4-5 minutes on each side until the internal temperature reaches 165 degrees.
  4. Once chicken is done, mince garlic and add to the pan and cook for 1 minute until fragrant. Add chili mixture and heavy cream and cook for an additional 1-2 minutes.
  5. Plate chicken and pour remaining sauce over chicken.
  6. Serve with rice as an option and enjoy! (rice is not accounted for in nutrients per serving).

Helpful hints

  • Calabrian chili paste can be spicy. If you are sensitive to spicy food, you can reduce the amount of chili paste by half.
  • If unable to find Calabrian chili paste, it can be substituted with Siracha chili paste or red pepper flakes.
