Apple Cinnamon Farfel Kugel

Ingredients

  • 1 cup hot water
  • 1 cup matzo farfel
  • 1/4 cup granulated sugar
  • 2 large apples
  • 2 teaspoons ground cinnamon
  • 3 large egg whites
  • 1/2 cup pineapple chunks in unsweetened juice

Preparation

  1. Preheat oven to 375° F.
  2. Peel, core and shred apples.
  3. Spray an 8 x 8-inch baking dish with cooking spray.
  4. In a large bowl, combine the hot water and farfel.
  5. Add the sugar, apples and cinnamon.
  6. Beat egg whites to a stiff peak. Fold in the egg whites.
  7. Add drained pineapple chunks and stir.
  8. Pour mixture into the prepared baking dish and dust the top with more cinnamon.
  9. Bake for 45 minutes.

Helpful hints

  • Matzo farfel is available in the Passover-product aisle in your supermarket. It is coarsely crumbled matzo.
