Apples Baked in Cider

Ingredients

  • 4 medium baking apples
  • 1/4 cup brown sugar
  • 1 cup apple cider
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter
  • 4 tablespoons whipped topping

Preparation

  1. Preheat oven to 350° F.
  2. Core apples and peel a strip from around the top of each apple. Place apples in a small baking pan.
  3. Combine brown sugar, cider, cinnamon and butter in a small saucepan. Bring to a boil and pour over apples.
  4. Bake for 45 minutes, basting occasionally.
  5. Serve warm. Top with whipped topping.

Helpful hints

  • Reduce portion to 1/2 apple and substitute a sugar and sugar substitute brown sugar blend for a diabetes-friendly portion, approximately 18 grams carbohydrate.
