Ingredients
- 1 cup buttermilk
- 2 eggs
- 1/4 cup butter
- 2 tablespoons lemon juice
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1-1/2 cups sugar
- 4 tablespoons all-purpose flour
- 1 deep-dish pie crust, 9-inch
Preparation
- Preheat oven to 375° F. Set butter out to soften.
- In a large mixing bowl, mix together buttermilk, eggs, softened butter, lemon juice, almond extract, vanilla extract, sugar and flour.
- Pour mixture into a deep-dish pie crust.
- Bake for one hour.
- Let cool and serve.
Helpful hints
- Buttermilk is high in phosphorus and potassium but the portion per serving is small enough to keep this recipe kidney friendly.
