Ingredients

  • 1-1/2 cups butter
  • 3-1/8 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups Splenda® baking blend
  • 1-1/2 teaspoons baking soda
  • 3 teaspoons cream of tartar
  • 1-1/2 cups + 5 tablespoons rice milk, unenriched
  • 2 eggs
  • 3 teaspoons vanilla
  • 1 cup Splenda®  brown sugar blend
  • 1 tablespoon cinnamon
  • 1 cup powdered sugar

Preparation

  1. Preheat oven to 350° F.
  2. Melt 1/2 cup butter and leave remaining butter out to soften.
  3. In medium-sized bowl, mix 3 cups flour, salt, 1 cup Splenda baking blend, baking soda, cream of tartar, 1-1/2 cups Rice Dream, eggs and 2 teaspoons vanilla. Slowly stir in melted butter.
  4. Pour mixture into a greased 9" x 13" pan.
  5. Mix 1 cup softened butter, Splenda brown sugar blend, 2 tablespoons flour and cinnamon until well combined. Drop evenly over the batter and swirl with a knife.
  6. Bake for 28-32 minutes.
  7. Combine remaining 1 cup Splenda baking blend and powdered sugar, 5 tablespoons rice milk and 1 teaspoon vanilla. Drizzle over cake while it’s still warm.

Helpful hints

  • This high calorie dessert is great for boosting calories. Enjoy for breakfast or dessert.
  • If available,1 cup Ideal® powdered sugar substitute may be used to replace 1 cup Splenda baking blend and 1 cup powdered sugar to reduce calories and carbohydrates.
