Lemonade Rice with Mixed Vegetables

Ingredients

  • 2 tablespoons onion
  • 12 ounces lemonade
  • 1/2 cup water
  • 1 cup brown rice, uncooked
  • 1 cup frozen mixed vegetables
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt

Preparation

  1. Mince onion.
  2. Pour lemonade and water into rice cooker or saucepan.  Add rice, onion, mixed vegetables and seasonings. 
  3. Start rice cooker or cook on stove, covered, over medium heat for 20 minutes. 

Helpful hints

  • Fresh, frozen, bottled or canned lemonade may be used in this recipe. Be aware, some lemonades contain phosphate additives which increases phosphorus content.  Read labels and avoid brands with this additive.
  • Select a vegetable mix with carrots, corn, green beans, green peas or substitute your favorite low potassium frozen vegetable blend.
  • If you have diabetes, try sugar-free lemonade in this recipe to lower carbohydrates by 5 grams per serving.
  • For best results, do not remove cover or stir rice during cooking.
