Cucumber and Radish Salad

Ingredients

  • 1 garlic clove
  • 2 sprigs fresh tarragon
  • 1 large cucumber
  • 12 large red radishes
  • 1 teaspoon white wine vinegar
  • 1/2 cup light sour cream
  • 1/2 teaspoon ground black pepper

Preparation

  1. Mince the garlic and chop the tarragon. Thinly slice cucumber and radishes.
  2. In a mixing bowl combine the garlic, vinegar, sour cream and black pepper.
  3. Toss the cucumber and radishes with the sour cream mixture. Marinate in the refrigerator for 20 minutes before serving.
  4. Divide salad into 4 bowls and top with chopped tarragon.

Helpful hints

  • If the sour cream mixture is added to the vegetables more than 20 minutes before serving, the cucumbers will wilt and the sauce may be runny.
