Durham Southern Style Chicken Salad

Ingredients

  • 2 cups cooked chicken
  • 1/2 medium white onion
  • 3/4 cup celery
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • 2 tablespoons vinegar
  • 2 tablespoons sugar

Preparation

  1. Dice chicken. Finely chop onion and slice celery.
  2. Combine chicken, onion and celery in a bowl.
  3. In a separate bowl, mix the mayonnaise, mustard, vinegar and sugar.
  4. Add thoroughly mixed mayonnaise mixture to chicken and stir. Keep refrigerated until ready to serve.

Helpful hints

  • Make sandwiches or serve as a salad on top of mixed greens.
  • Use reduced-fat mayonnaise for lower fat, but sodium will be higher: 11 g fat, 210 calories, 256 mg sodium.
  • Use vinegar of choice, but if seasoned check sodium content.
