Sweet and Sour Cucumbers

Ingredients

  • 3 medium cucumbers
  • 1 medium white onion
  • 1/4 cup sugar
  • 1/2 cup white wine vinegar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (optional)

Preparation

  1. Slice cucumbers and onions about 1/8-inch thick. Place in a large bowl.
  2. Combine sugar and vinegar. Mix until sugar is dissolved completely. Add additional sugar or vinegar to desired taste.
  3. Pour over cucumbers and onion. Add salt and pepper.
  4. Cover bowl with plastic wrap and set in refrigerator at least 2 hours.
  5. Serve in small salad bowls as a salad or snack.

Helpful hints

  • The longer cucumbers and onions marinate, the softer they become and more flavors are absorbed also.
  • Sweet and Sour Cucumbers can be stored in a canning jar. Great for gifts.
  • Note the serving size and added sugar. If you are also managing diabetes, speak with your dietitian or doctor if this is fine to incorporate into your diet.
