Ingredients
- 1 medium potato
- 1 pound chicken thighs, boneless and skinless
- 2 teaspoon DaVita homemade Adobo seasoning recipe, omit salt
- 2 tablespoons olive oil
- 1 medium yellow onion
- 3 cloves garlic
- 8 oz no salt added tomato sauce
- 1 green bell pepper, large dice
- 1 large carrots
- 1-1/2 teaspoons homemade Sazon seasoning (see Helpful Hint)
- 2 bay leaves
- 2 teaspoon dried oregano
- 1/4 cup manzanillo olives (green olive)
- 3 cups unsalted chicken broth
Preparation
- Peel and cut potato into a large dice. Boil potatoes until soft in a large pot of water. Drain water and set aside. Dry the chicken thighs thoroughly with paper towels. Cut into two-inch cubes and season with adobo.
- Place a pot on medium high heat and add oil. Add chicken in one layer and brown, turning once.
- Once brown, remove chicken from pot and set aside. Large dice the onion and finely chop garlic. Add onion and garlic and cook for 2 minutes on low heat.
- Large dice the green pepper. Add the tomato sauce and bell pepper and bring to a boil.
- Cut carrot into 1/4-inch rounds. Add the Sazon, bay leaves, oregano, olives, carrots, and chicken broth. Bring to a boil.
- Add the chicken back to the pot along with potatoes. Lower the heat and allow to simmer for 45 minutes.
- Remove from heat and enjoy!
Helpful hints
- This recipe is higher in potassium, but it is a one-dish meal, which would be an acceptable amount of potassium. If you are on a lower potassium diet, omit the tomato sauce.
- Homemade Sazon use equal parts garlic powder, ground cumin, ground coriander, ground annatto (or turmeric), and ground oregano. This recipe would be 1/4 teaspoon each. Keep a mixture on hand to use in other recipes. Store bought Sazon is higher in sodium.
- Make a batch of DaVita’s Adobo seasoning to also keep on hand for other recipes. This recipe already contains salt in the ingredients, so omit for this recipe when making adobo seasoning.
- Boiling potatoes reduces potassium content by 50-75%. You may also double boil them to reduce potassium a bit more.
