Ingredients
- 2 medium cucumbers
- 1/8 teaspoon salt
- 1/2 medium sweet onion
- 1/4 cup white wine vinegar
- 1 tablespoon canola oil
- 1/8 teaspoon black pepper
- 1/2 cup reduced-fat sour cream
Preparation
- Peel and thinly slice cucumbers and place in a medium-sized serving bowl.
- Sprinkle with salt. Allow to sit for 15 minutes then rinse and press out excess moisture.
- Thinly slice onion.
- Add remaining ingredients to cucumbers and toss.
- Chill in the refrigerator before serving.
Helpful hints
- This is a wonderful addition to any meal, but especially beef and pork dishes.
- Instead of using 2 common cucumbers, 1 large “English hothouse” seedless cucumber can be substituted.
- Omit onion if desired—the cucumbers are just as tasty without it.
