Ingredients
- 2 medium carrots
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1/8 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 cup apple juice
- 2 tablespoons butter
Preparation
- Slice carrots into 1-inch thick slices. Place carrots and 1/4 cup water in a pot. Cover and cook until slightly tender.
- Mix together sugar, cornstarch, salt, ginger, apple juice and melted butter. Pour mixture over carrots and water.
- Cook, stirring occasionally, for 10 minutes or until mixture thickens.
Helpful hints
- Fresh carrots are best but you can substitute frozen carrots.
- If desired, replace ginger with ground cinnamon.
